From the sea, everything arrives fresh. From the land, everything carries a story. We cook with simplicity and intention, allowing flavour to speak louder than excess. The oven, the embers and the act of sharing remain our essential ingredients.

Chef Cristiano Ishii

This is the Executive Chef of Octant Furnas.
Born in Brazil, where he began working in the kitchen as a teenager, he is driven by a simple conviction: cooking is living the place. His path has not always been linear — he worked in other fields, lived in Japan where he absorbed an absolute respect for ingredients and a rigorous work ethic, spent time in the United States, and in 2024, already in Portugal, found in the Azores at Octant Furnas a territory that challenges and inspires him daily: the warm earth, the steam, the slow rhythm, the sea delivering absolute freshness.

The TEAMS. He believes in growth through example and sharing. He values merit, discipline and the willingness to learn. He leads with high standards and closeness.

The GUEST. Knowing that someone carries away a memory created at the table is the highlight of his work. Cooking is about creating connection.

The PRODUCT. In the Azores he found ingredients with a distinct identity — fresh fish, produce that grows slowly, flavours that need no artifice. His cuisine is intentional, simple in gesture and deep in flavour.

Chef Cristiano Ishii’s gastronomy bridges world and territory. It honours his journeys, yet belongs to the island.
